So Nancy's younger brother just got married a couple of weeks ago. The family is totally happy for him and his new wife. Just last night we were sitting around looking at the pictures from their honeymoon. They looked so happy enjoying the surroundings of their resort in Mexico. It truly looked like paradise. We saw photos of boat trips and excursions, relaxing and dancing, and picturesque scenaries and sunsets. The other thing I noticed, however was that their was apparently a lot of eating and drinking. And that's when it hit me. The typical vacation getaway consists of unlimited eating of animal products and unlimited drinking of alcohol. We're not bringing up this point because we are condemning anyone for participating in those lifestyle choices...but what if we are just not into all that? The reason this is important is because Nancy and I are planning or wedding anniversary of 15 years on September 15th of 2011. We believe that 15 years is a strong enough achievement that we want to do something really special like go on the honeymoon we were not able to go on following our wedding. The thing is is that we don't want to compromise our vegan/vegetarian values by going on a vacation getaway. We want to go somewhere where our vegan/vegetarian values are emphasized and celebrated. So Nancy got right on the case and start looking for some places on the internet. We are so happy because there are some really great places to go! Though we haven't decided quite yet. We felt it would be helpful to share a few sources to help others find a suitable place to vacation, honeymoon, or getaway and hold true to their values but still achieve that special paradise experience. Here are some great resources:
Now the bigger challenge. How do we host our 15 year anniversary vegetarian party for 200 meat eating family members and friends? Phew! We Finally Got A Vitamix! 08/29/2010
After years of learning about the effects of pour nutrition and seeking solutions to gift our bodies with God's food, we finally got our Vitamix blender. I don't know if you can call it a blender really because what it does is much more than what I have ever seen a mere blender do. All I can say is that my family is excited every morning to create something delicious with it. We have already made tortilla soup, ice cream, and a host of green, red, and blue smoothies. The good news is that most of the smoothies we have made included veggies that my sons would otherwise not eat raw, like spinach and kale. But once you drop them in the Vitamix and that thing gets to blending, everything comes out so that the kids can't even tell theres veggies in there! Nancy will be on the hunt for recipes and share some of her own creations too. If you are looking to increase your level of health I strongly suggest getting a vitamix.
